Hand-rolled pappardelle. Nonna's ragù. A carafe of house red and nowhere to be.

The Founders

Marco & Rosa Ferrante

Marco learned to make pasta on a marble table in his grandmother's kitchen in Locorotondo. Rosa grew up watching her mother pull bread from a wood-fired forno every Sunday morning. They met in a trattoria in Fasano, married in the same room, and spent the next decade figuring out how to bring that table to you.

La Filosofia

Nothing here has ever been written down.

Every recipe lives in muscle memory — in the angle of a wrist rolling pasta, in the sound of onions softening in olive oil. We don't use timers. We use instinct.

Le Origini

Every ingredient has a name.

We don't say "locally sourced." We say Cascina Rossi in Fasano. We say Sal's at Fulton. Provenance isn't a marketing word here — it's an address.

Fourth-generation olive grove. Their Coratina extra-virgin goes into everything — the pasta water, the bread, the finish on the branzino.
